It's fall and that calls for warming the house with foods in the oven - So here is a recipe for winter squash with cheese -
Baked Butternut au Gratin
1 medium sized butternut squash
2 Tablespoons of butter, melted (the real stuff!)
½ cup shredded sharp or extra sharp cheddar
1 Tablespoon freshly shredded parmesan
Cut the squash in half lengthwise and remove the seeds.
Lay on a baking sheet, sprinkle with olive oil and bake until tender, but not too soft. Bake at 350 degrees until the squash is tender. Let cool.
Turn the squash and gently cut the skin off.
Cut the squash into cubes and place into an ovenproof casserole dish.
Carefully mix in the butter and cheddar.
Top with the parmesan and bake in a 350 degree oven for about 20 minutes, until the top is starting to turn brown.
Goes great with meatloaf and baked brussels sprouts!
