Left over Turkey Hash

Thanksgiving is over, but if you're like me, you still have a lot of turkey!  So what do you do with it?  Here's an idea - Turkey Hash!

1 cup of chopped onion
1 cup of chopped tomatoes
3 cups of diced Turkey
4 cups of diced potatoes (about 3 or 4 medium potatoes)
3 Tablespoons olive oil
1 1/2 Tablespoon butter
1 Tablespoon worchestershire sauce
Salt and pepper to taste

Heat 2 Tablespoons of olive oil in a large skillet, then melt the butter. Brown the potatoes on medium.  Add 2 Tablespoons of water, turn heat to low and cover.  Cook until potatoes are tender, checking often and adding small amounts of water as needed.

Add the remaining olive oil and the onions.  Cook on medium low, stirring frequently, until the onions are soft and golden.

Stir in the turkey and cook until everything is heated through.

Add the tomatoes and cook on medium high until the hash is hot!  Stir in the worchestershire sauce and salt and pepper to taste.

Serve with a fried or poached egg (We like fried at our house).
